Ingredients

  • 1 cup pumpkin puree
  • 1/3 cup Greek yogurt
  • 2 large eggs
  • 1/2 cup light brown sugar (or coconut sugar)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 11/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 cup powdered sugar
  • 2 tablespoons maple syrup
  • 12 teaspoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix melted butter, pumpkin puree, yogurt, eggs, brown sugar, maple syrup, and vanilla.
  3. In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, cardamom, ginger, allspice, and cloves.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into the loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool completely before glazing.
  7. For the glaze, whisk powdered sugar, maple syrup, and milk until smooth. Drizzle over the bread.
