- 1 lb ground beef (or sausage/ground turkey)
- 2 cups diced potatoes
- 1 cup mixed vegetables (peas, carrots, or corn)
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- 1 cup shredded cheddar or mozzarella cheese
- 1/2 cup fried onions or breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Optional: 1/2 tsp chili powder for heat
Instructions
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add diced potatoes, mixed vegetables, and seasonings to the skillet. Cook for 5 minutes.
- Stir in the cream of mushroom or chicken soup until well combined.
- Transfer the mixture to a greased casserole dish.
- Sprinkle shredded cheese evenly over the top.
- Bake for 25 minutes or until bubbly and potatoes are tender.
- Top with fried onions or breadcrumbs and bake for another 5 minutes.
- Let cool slightly before serving.
Notes
- For a spicier version, add extra chili powder or hot sauce.
- Replace ground beef with ground turkey or sausage for variation.
- Store leftovers in an airtight container for up to 3 days.
