- 1 cup light brown sugar
- 0.5 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon baking powder
- 1 large egg
- 0.5 cup unsalted butter
- 1 cup freshly grated carrots
- 4 ounces cream cheese (softened)
- 1 large egg yolk
- 0.5 cup granulated sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a bowl, mix together the brown sugar, salt, and vanilla extract.
- Add the flour, cinnamon, nutmeg, baking powder, and egg to the mixture.
- Melt the butter and stir it into the batter.
- Add the grated carrots and mix until well combined.
- In another bowl, beat the cream cheese, egg yolk, and granulated sugar until smooth.
- Pour the batter into the prepared pan and swirl the cream cheese mixture on top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into bars.
Notes
- Store bars in an airtight container in the refrigerator.
- For added flavor, consider adding walnuts or raisins.
