Ingredients

  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together the brown sugar, salt, and vanilla extract.
  3. Add the flour, cinnamon, nutmeg, baking powder, and egg to the mixture.
  4. Melt the butter and stir it into the batter.
  5. Add the grated carrots and mix until well combined.
  6. In another bowl, beat the cream cheese, egg yolk, and granulated sugar until smooth.
  7. Pour the batter into the prepared pan and swirl the cream cheese mixture on top.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool before cutting into bars.
