Caramel Apple Oatmeal Cookies are soft, chewy cookies filled with oats, apples, and caramel bits.

- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups old-fashioned rolled oats
- 1 1/2 cups peeled and finely diced apples (about 2 medium apples)
- 1 cup caramel baking bits or chopped soft caramels
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the softened butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- Fold in the oats, diced apples, and caramel bits.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container for up to a week.
- You can use any type of apple for this recipe.
- For extra caramel flavor, drizzle melted caramel on top before serving.
