Description

A spicy twist on classic sloppy joes featuring Cajun-seasoned ground chicken and colorful bell peppers.


Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Cajun seasoning (adjust to taste)
  • Salt and black pepper to taste
  • 4 burger buns, toasted
  • Optional: shredded cheddar, jalapeños, hot sauce

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and bell peppers. Cook for 3 minutes until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Add ground chicken. Break it apart with a spoon and cook until no longer pink (5-6 minutes).
  5. Mix in tomato paste, Cajun seasoning, Worcestershire sauce, salt, and pepper.
  6. Pour in chicken broth. Simmer for 5 minutes until thickened.
  7. Toast burger buns lightly.
  8. Divide chicken mixture between buns. Top with optional toppings if desired.

Notes

  • For extra heat, add 1/2 tsp cayenne pepper.
  • Swap ground turkey for chicken if preferred.
  • Store leftovers in an airtight container for up to 3 days.
