Buttery Raspberry Crumble Cookies with a Sweet Jam Filling
Ingredients

- 1 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon kosher salt
- 1/2 cup seedless raspberry jam
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together softened butter, granulated sugar, and powdered sugar.
- Add vanilla and almond extracts; mix well.
- Gradually add flour and salt; blend until dough forms.
- Press half of the dough into the bottom of a greased baking pan.
- Spread raspberry jam evenly over the dough.
- Crumble the remaining dough over the jam.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into squares.
Notes
- Store cookies in an airtight container.
- Substitute raspberry jam with other fruit jams if desired.
