  • 2 1/4 cups all-purpose flour
  • 1/4 cup white sugar (for coating)
  • 1 tsp ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, honey, and brown sugar.
  3. Add the egg yolk, vanilla extract, and pumpkin puree. Mix until smooth.
  4. In another bowl, combine flour, baking soda, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet mixture and stir until well combined.
  6. In a small bowl, mix white sugar and cinnamon for coating.
  7. Form dough into balls, roll them in the cinnamon sugar, and place on a baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
