Delicious cookies with brown sugar and cinnamon flavors, filled with caramel.

- 1 cup unsalted butter, softened
- ¾ cup packed light brown sugar
- ¼ cup white sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2¼ cups all-purpose flour
- ½ teaspoon baking soda

- ¼ teaspoon salt
- 12–14 soft caramel candies (unwrapped) or ½ cup caramel baking bits
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon white sugar (for sprinkling)
- Optional: A pinch of flaky sea salt (for salted caramel flavor)
- Optional: ½ teaspoon espresso powder (to enhance the brown sugar notes)
- Optional: ¼ cup finely chopped pecans or walnuts for texture
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter, light brown sugar, and white sugar until smooth.
- Add the egg and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in caramel candies or caramel baking bits.
- Drop spoonfuls of dough onto a baking sheet, spaced apart.
- Sprinkle with brown sugar, cinnamon, and white sugar.
- Bake for 10-12 minutes, or until edges are golden.
- Remove from oven and allow to cool on the baking sheet.
Notes
- For salted caramel flavor, sprinkle with flaky sea salt.
- For enhanced flavor, add espresso powder.
- Chopped nuts add texture but are optional.
