Description

A comforting casserole featuring broccoli, rice, cheese, and chicken.


Ingredients

  • 2 cups water
  • 2 cups uncooked rice
  • 1 (10 ounce) can cream of chicken soup
  • 1 (10 ounce) can cream of mushroom soup
  • 2 cups cooked chicken, shredded
  • ¼ cup butter
  • 1 cup milk
  • 1 small white onion, chopped
  • 16 ounces broccoli florets
  • 2 cups shredded Cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil.
  3. Add uncooked rice and stir. Cover and reduce heat to low. Cook for about 20 minutes.
  4. In a bowl, mix cream of chicken soup, cream of mushroom soup, shredded chicken, butter, and milk.
  5. In a large baking dish, combine cooked rice, chopped onion, broccoli florets, and the soup mixture.
  6. Top with shredded Cheddar cheese.
  7. Bake for 30 minutes or until cheese is bubbly and golden.

Notes

  • You can use leftover chicken for this recipe.
  • Feel free to add other vegetables if desired.
  • This casserole can be made ahead and frozen.
