A comforting casserole featuring broccoli, rice, cheese, and chicken.
Ingredients

- 2 cups water
- 2 cups uncooked rice
- 1 (10 ounce) can cream of chicken soup
- 1 (10 ounce) can cream of mushroom soup
- 2 cups cooked chicken, shredded
- ¼ cup butter
- 1 cup milk
- 1 small white onion, chopped
- 16 ounces broccoli florets
- 2 cups shredded Cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil.
- Add uncooked rice and stir. Cover and reduce heat to low. Cook for about 20 minutes.
- In a bowl, mix cream of chicken soup, cream of mushroom soup, shredded chicken, butter, and milk.
- In a large baking dish, combine cooked rice, chopped onion, broccoli florets, and the soup mixture.
- Top with shredded Cheddar cheese.
- Bake for 30 minutes or until cheese is bubbly and golden.
Notes
- You can use leftover chicken for this recipe.
- Feel free to add other vegetables if desired.
- This casserole can be made ahead and frozen.
