Delicious blueberry cream cheese egg rolls, fried to perfection.
Ingredients

- 2 cups fresh blueberries
- ⅓ cup sugar
- 1 tablespoon lemon juice
- 7 tablespoons water, divided
- 3 tablespoons cornstarch
- 8 oz cream cheese, room temperature
- ⅓ cup sugar
- 1 teaspoon lemon juice
- 1 teaspoon vanilla
- 12 egg roll wrappers
- 2+ cups vegetable oil for frying
- ¼ cup powdered sugar for dusting
Instructions
- In a saucepan, combine blueberries, sugar, lemon juice, and 3 tablespoons of water. Cook over medium heat until the blueberries burst.
- Mix cornstarch with the remaining water and add to the blueberry mixture. Stir until thickened.
- In a bowl, mix cream cheese, sugar, lemon juice, and vanilla until smooth.
- Place an egg roll wrapper on a flat surface. Add a tablespoon of cream cheese filling and a tablespoon of blueberry filling in the center.
- Fold the wrapper over the filling and seal the edges with water.
- Heat vegetable oil in a deep pan. Fry the egg rolls until golden brown.
- Remove and drain on paper towels. Dust with powdered sugar before serving.
Notes
- Serve warm for best taste.
- Store leftovers in an airtight container in the refrigerator.
- Can be baked instead of fried for a healthier option.
