  • ¼ cup sugar
  • 1 tsp vanilla extract
  • Optional: 1 teaspoon lemon zest

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a bowl, mix flour, baking powder, salt, and sugar.
  3. In another bowl, whisk eggs, milk, vanilla, and melted butter.
  4. Combine wet and dry ingredients, then fold in blueberries.
  5. In a separate bowl, beat cream cheese, sugar, vanilla, and lemon zest until smooth.
  6. Pour half the batter into the loaf pan, spread cream cheese mixture, then top with remaining batter.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool before slicing.
