Delicious Black Folks Sweet Potato Pie
Ingredients
- Sweet Potatoes: 2 large (about 2 cups mashed)
- Granulated Sugar: 1 cup
- Brown Sugar: 1/2 cup
- Evaporated Milk: 1/2 cup
- Unsalted Butter: 1/2 cup (melted)
- Eggs: 2 large
- Vanilla Extract: 1 teaspoon
- Ground Cinnamon: 1 teaspoon
- Ground Nutmeg: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Unbaked Pie Crust: 1 (9-inch)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and boil the sweet potatoes until tender, then mash them.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
- Pour the filling into the unbaked pie crust.
- Bake for 45-50 minutes or until a knife inserted in the center comes out clean.
- Let the pie cool before serving.
Notes
- Serve warm or chilled.
- Top with whipped cream if desired.
- Store leftovers in the refrigerator.
