Ingredients

  • Sweet Potatoes: 2 large (about 2 cups mashed)
  • Granulated Sugar: 1 cup
  • Brown Sugar: 1/2 cup
  • Evaporated Milk: 1/2 cup
  • Unsalted Butter: 1/2 cup (melted)
  • Eggs: 2 large
  • Vanilla Extract: 1 teaspoon
  • Ground Cinnamon: 1 teaspoon
  • Ground Nutmeg: 1/2 teaspoon
  • Salt: 1/4 teaspoon
  • Unbaked Pie Crust: 1 (9-inch)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and boil the sweet potatoes until tender, then mash them.
  3. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  4. Pour the filling into the unbaked pie crust.
  5. Bake for 45-50 minutes or until a knife inserted in the center comes out clean.
  6. Let the pie cool before serving.
