  • The Pumpkin Filling:
    • 1 can (15 oz) pumpkin puree
    • 1 cup sweetened condensed milk
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground nutmeg
    • ½ teaspoon ground ginger
    • ½ teaspoon salt
  • For the Crumble Topping:
    • 1 cup all-purpose flour
    • ½ cup brown sugar
    • ½ cup oats
    • ½ cup cold butter, cubed
    • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Make the crust by mixing flour, sugar, and salt. Cut in cold butter until crumbly. Press into a pie dish.
  3. For the filling, whisk pumpkin puree, condensed milk, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Pour over crust.
  4. Mix flour, brown sugar, oats, cinnamon, and cold butter for the topping until crumbly. Sprinkle over filling.
  5. Bake for 40-45 minutes until set. Cool before serving.

Notes

  • Use cold butter for best texture.
  • Let pie cool completely before slicing.
