- For the Crust:
- 1 cup all-purpose flour
- ½ cup cold butter, cubed
- ¼ cup granulated sugar
- ¼ teaspoon salt
- The Pumpkin Filling:
- 1 can (15 oz) pumpkin puree
- 1 cup sweetened condensed milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ½ teaspoon salt
- For the Crumble Topping:
- 1 cup all-purpose flour
- ½ cup brown sugar
- ½ cup oats
- ½ cup cold butter, cubed
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 375°F (190°C).
- Make the crust by mixing flour, sugar, and salt. Cut in cold butter until crumbly. Press into a pie dish.
- For the filling, whisk pumpkin puree, condensed milk, eggs, vanilla, cinnamon, nutmeg, ginger, and salt. Pour over crust.
- Mix flour, brown sugar, oats, cinnamon, and cold butter for the topping until crumbly. Sprinkle over filling.
- Bake for 40-45 minutes until set. Cool before serving.
Notes
- Use cold butter for best texture.
- Let pie cool completely before slicing.
- Store leftovers in the fridge.
