Description
A delicious twist on traditional enchiladas using cheese tortellini.
Ingredients

- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- 1 package (9 oz) cheese tortellini
- 2 cups shredded cheddar cheese
- 1 cup enchilada sauce
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped (optional for garnish)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Add ground beef, onion, and garlic. Cook until beef is browned and onions are translucent.
- Stir in black beans, diced tomatoes, and taco seasoning. Cook for 5 minutes.
- In a separate pot, cook tortellini according to package instructions. Drain and set aside.
- Combine the beef mixture with the cooked tortellini.
- In a baking dish, spread half of the enchilada sauce on the bottom.
- Pour the beef and tortellini mixture over the sauce in the baking dish.
- Top with remaining enchilada sauce and sprinkle with cheddar cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Remove from oven and let it cool for a few minutes. Serve with sour cream and cilantro if desired.
Notes
- Adjust seasoning to your taste.
- Can substitute ground turkey for a leaner option.
- Try adding jalapeños for extra heat.
