- Mustard (for binding)
- Pepper-forward brisket rub
- Hickory wood pellets (for smoking)
- Sourdough bread
- Colby jack cheese
- Provolone cheese
- Fried crispy onions
- Unsalted butter
Instructions
- Coat the brisket with mustard and the brisket rub.
- Smoke the brisket using hickory wood pellets until fully cooked.
- Let the brisket rest before slicing it thinly.
- Butter one side of each slice of sourdough bread.
- Layer brisket, cheeses, and fried onions on the unbuttered side of the bread.
- Top with another slice of bread, buttered side out.
- Grill the sandwich until golden brown and the cheese melts.
