  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup light brown sugar (or coconut sugar)
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 11/2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the mashed bananas and pumpkin puree until smooth.
  3. Add eggs, brown sugar, vegetable oil, and vanilla extract to the banana mixture. Mix well.
  4. In a separate bowl, combine flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
