Description

Delicious apple fritter muffins topped with a sweet glaze.


Ingredients

  • 2 large apples Granny Smith or Honeycrisp, peeled, cored, and diced
  • 2 cups all-purpose flour
  • 3/4 cup brown sugar packed
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 12 tablespoons milk adjust for glaze consistency

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine flour, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together eggs, milk, melted butter, and vanilla.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Gently stir in the diced apples.
  6. Divide the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. While muffins cool, mix powdered sugar and milk to create the glaze.
  9. Drizzle the glaze over the cooled muffins.

Notes

  • Adjust the glaze consistency by adding more or less milk.
