Delicious apple fritter muffins topped with a sweet glaze.
Ingredients

- 2 large apples Granny Smith or Honeycrisp, peeled, cored, and diced
- 2 cups all-purpose flour
- 3/4 cup brown sugar packed
- 2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup unsalted butter melted
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- 1 –2 tablespoons milk adjust for glaze consistency
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, milk, melted butter, and vanilla.
- Fold the wet ingredients into the dry ingredients until just combined.
- Gently stir in the diced apples.
- Divide the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- While muffins cool, mix powdered sugar and milk to create the glaze.
- Drizzle the glaze over the cooled muffins.
Notes
- Store muffins in an airtight container for up to 3 days.
- Adjust the glaze consistency by adding more or less milk.
