  • 2/3 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • Glaze: 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix brown sugar and cinnamon in a small bowl. Set aside.
  3. In a large bowl, cream sugar and butter. Beat in eggs and vanilla.
  4. Combine flour and baking powder; stir into creamed mixture alternately with milk.
  5. Pour half the batter into the loaf pan. Layer half the apples and half the cinnamon-sugar mix.
  6. Repeat layers with remaining batter, apples, and cinnamon-sugar.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool slightly, then drizzle with glaze.
