Ingredients

  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples (about 1 medium apple)
  • ½ cup all-purpose flour (for streusel)
  • ¼ cup packed light brown sugar (for streusel)
  • ¼ teaspoon ground cinnamon (for streusel)
  • ¼ cup unsalted butter (for streusel, cold and cut into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the egg, milk, melted butter, and vanilla.
  4. Combine the wet and dry ingredients. Fold in the chopped apples.
  5. In a separate bowl, combine the streusel ingredients and mix until crumbly.
  6. Fill muffin cups with the batter and sprinkle streusel on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
