Delicious Apple Cinnamon Streusel Muffins with a crunchy topping.
Ingredients

- 1½ cups all-purpose flour
- ½ cup granulated sugar
- 1½ teaspoons baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 large egg
- ½ cup milk
- ¼ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup chopped apples (about 1 medium apple)
- ½ cup all-purpose flour (for streusel)
- ¼ cup packed light brown sugar (for streusel)
- ¼ teaspoon ground cinnamon (for streusel)
- ¼ cup unsalted butter (for streusel, cold and cut into small pieces)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk the egg, milk, melted butter, and vanilla.
- Combine the wet and dry ingredients. Fold in the chopped apples.
- In a separate bowl, combine the streusel ingredients and mix until crumbly.
- Fill muffin cups with the batter and sprinkle streusel on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Store in an airtight container.
- Can substitute other fruits.
